Cheesecake with berries

Cheesecake with berries

Why this difference? because the agar agar is a vegetable gelatin that solidifies at room temperature, then the case would not fully accept it cool before putting it on the cake, but the gelatin is of animal origin, and it needs to be put to rest in the fridge to solidify.

Of course all this if you want to do things right, and if you want to have the edges of the cake clean, I removed the cake from the oven, removed the berries from the heat and pour the berries on the cake, so do it without even breathing.
And once it has cooled in the refrigerator immediately, the cheesecake is a cake that has to remain at room temperature!
Obviously the edges of my cake was speckled purple, where the gelatin had failed to pass.
